Oh Boy, More Pizza

I'm amazed at what makes the news sometimes Take a look at this.

Normally, mozzarella cheese is not what I would call a bad cheese when used responsibly but it seems everyone can't think of a thing other than Pizza when they hear Mozzarella.

The Obesity Epidemic just got a great shot in the arm. However it will be the cheese that gets blamed.


  1. It looks like mozzarella is mostly consumed as a pizza topping. There are not many LCarbers around.

  2. True, but I'm wondering what a roasted chicken breast with mozza melted over the top would taste like. Maybe I'll give it a try once the cheese goes down in price.

Cheese universally could make a lot of things taste better - chicken, fish ,sliced eggplants, zucchini fritters, casseroles, mushrooms sauteed with onions, it is an important ingredient in the LC pizza crust made out of cauliflower. I remember giving a big chunk of mozzarella with a tea to my son as a breakfast before school. Today I cooked couple slices of bacon, cut solids into thin pieces with a scissors,added a zucchini sliced into ribbons with a vegetable peeler, let it to be slightly cooked , added garlic and cheese.
    I go easy on cheese, like nuts. Unfortunatelly, I found out it could be not good for a person who can easily gain weight and has trouble to loose it.

    1. I agree about the cheese if you have difficulty losing weight. I may have it once a week in an omelet. I think that if ever I get down to my ideal weight I could probably have it more often but still in moderation.
