I love life

Got home from work, made supper, ate and looked out the window overlooking my balcony. There is a giant evergreen growing 5 feet away, my flower pots are full to overflowing with flowers, there's a bit of a wind, some clouds and the air is wonderful. All of a sudden I choked up, fighting back tears at how wonderful life is (for me) and how much I love life. I still don't like to see the news that shows disasters of nature and the mindless, irrational slaughter of innocent people by people who are crazy, etc. For this moment in time when I look out the window, I feel love, peace, and calm. I love my life regardless of all it's stresses and heartaches.

Besides, I just baked Eddie's flax bread and it's cooling on the counter. Now how much better can life be :)

  2. Hi Horf

Nothing like putting a bit of pressure on a fella ! A variant on this very healthy bread is adding some sun dried tomatoes and broken walnuts to the mix. If you really want to push the boat out add some grated Parmesan cheese. When cool, add some butter to a slice or two and it’s a great meal in itself. Happy your happy, long may it last.

    Kind regards Eddie

    1. Actually Eddie, I added some raw sunflower seeds to it as I like the crunch. The bread turned out great and I had a slice with butter on top as a compliment with my borscht. It was great.

    2. Hi Horf, we enjoy "Eddie's low carb bread" but one thing to bare in mind. As the recipe is not full of preservatives it should be kept in the fridge/freezer.

      All the best Jan

    3. Jan, I sliced the loaf and froze the slices. One thing I found is that only one thin slice with something like butter, spam, liverwurst, a wedge of lettuce, fills me up so much I can't eat for hours. This morning I had one slice with a thick slice of spam and a wedge of lettuce and it's now almost 3 pm and I'm still not hungry. I know, I know, spam but I've got this thing about spam and lettuce. Glad I found a good vehicle for it lol.

  3. Isn't it great to stop once in awhile... realise we really are happy. I love those moments. There is a Willy Nelson son called "Moment of Forever" - that is what I call the moments that take your breath away and bring a tear to your eye.

    1. Yes and I seem to get them more often when I'm eating this way! Definitely improvement.

  4. I've always found that having a garden and growing things brings a lot of joy. Also getting out into the countryside for long walks also is very uplifting. And Eddie's bread recipe definitely helps too. Love a chicken and bacon salad sandwich with mayo.

  5. I've always found that gardening and growing things helps to keep one's spirits up, plus long walks in the countryside. That plus LCHF helps to keep me sane(ish). It's good to just stop and appreciate things occasionally.
